With beef prices expected to rise this year, and the brief stretch of meat shortages we saw in grocery stores last year, a lot of folks are taking more interest in venison as their primary red meat. And this trend had been happening well before COVID-19 as health-conscious consumers from Seattle to Brooklyn were demanding grass fed and free range fare.

The flaws in beef supply only seem to highlight the qualities of venison. With the latest trend in dining being all about eating organically and locally, there should be no meat trendier than deer right now. Not to mention that the whitetail deer population, approximately 15 million in the U.S., has never been larger than it is today.

As hunters, we like to brag about the qualities of wild venison: Most people cant even tell the difference between a beef steak and a venison steak Its way healthier than beef is I havent bought beef from a grocery store in years and on we go.

But in the venison vs beef debate, is eating wild venison truly better than eating beef? Or is that just something we say when we feel the need to justify killing deer? I conducted an objective investigation to find out.

UNIVERSITY PARK, Pa. With the spoils of buck season venison steaks and deer bologna now in the refrigerator-freezer, health-conscious hunters and their families may want to know how wild game compares to domesticated meat in terms of fat and cholesterol.

Many people in rural areas consume a significant amount of wild game, says Dr. J. Lynne Brown, associate professor of food science in Penn States College of Agricultural Sciences. But information on the fat and cholesterol content of deer, squirrel and other game often is lacking.

Game meat tends to have the same amount of cholesterol as beef or pork, but considerably less fat than domestic meat, says Brown.

Nutrition experts agree it is important for all adults but especially those with heart problems to limit their fat and cholesterol intake.

The National Cholesterol Education Program recommends that healthy adults limit their daily cholesterol intake to less than 300 milligrams and their fat intake to no more than 30 percent of total calories consumed daily.

The following table shows how wild game stacks up in comparison to beef and pork. The beef sample used is a well-trimmed USDA standard grade. All samples are 100 grams of raw meat. The skin was removed from the birds.

Which Foods Are High In Cholesterol

All animal foods contain some cholesterol. But by cutting down on the animal foods that contain saturated fats you will be keeping the cholesterol in your diet in check too.

Foods that contain cholesterol and are high in saturated fat.

Full fat dairy foods such as milk, cheese, yogurt and cream.

Animal fats, such as butter, ghee, margarines and spreads made from animal fats, lard, suet and dripping.

Fatty meat and processed meat products such as sausages.

There are some foods which are low in saturated fat but high in cholesterol. These include eggs, some shellfish, liver, liver pate and offal. Most people dont need to cut down on the cholesterol thats found in these foods.

Is Venison Red Meat

Deer meat is considered red meat and in at least one aspect related to heart disease, it may be unhealthier than some other sources.

As with lamb and beef, there are high levels of L carnitine, which is not to be confused with the antioxidant L carnosine. According to a human trial published in the scientific journal Nature Medicine, there are significant dose-dependent associations between how much L-carnitine someone consumes and their risk for heart disease.

Why its so dangerous is because human gut flora metabolize it and in the process, create trimethylamine N-oxide which causes damage to the arteries. This can increase your risk for heart attacks, strokes, atherosclerosis, and congestive heart failure.

Unfortunately, yes. With 80 mg per 3.5 oz serving, its only slightly better than beef which is 89 mg. Chicken breast and pork sausage are both lower, at 64 and 70 mg respectively. Ground turkey is 69.

Whether its whitetail or reindeer, you wont find many meats that have cholesterol as high as venison.

In regards to heart and cardiovascular health, one rebuttal may be that its lower saturated fat content results in lower triglyceride levels in blood. However, there has not been testing to verify that theory. Plus, triglycerides are a separate issue from the high LDL cholesterol.

An American consumes 100 – 150 grams of meat per day, on average. And in almost all cultures, as income increases people celebrate life with more meat in their diet.

Meat is an important source of protein, vitamins B and D, minerals and fat.
