How To Bake Pork Chops

Cooking pork chops in the oven often starts on the stovetop. Because one of the best ways to bake pork chops is to start in an oven-safe skillet on the stove and then transfer them into a hot oven. High-heat frying sears them to a golden brown; and a moderately hot oven bakes the pork chops gently enough to keep them from drying out.

This “sear-roasting” method is a great way to cook pork chops in the oven: Fry one side to golden brown, then flip, and place the chops directly in the oven. The second side will brown beautifully as the heat from the oven cooks the middle to a tender finish.

Pork And Cholesterol: Think Lean

If you choose pork as a protein source, the word to keep in mind is “lean,” which means less saturated fat.

“Pork is lean, compact, white meat if you pick the loin cut,” says Amanda Meadows, RD;at the Methodist Hospital Weight Management Center in Houston. “A serving of pork loin with the fat trimmed off is about the same as eating an equivalent serving of chicken with the skin trimmed off,” says Meadows.

Pork tenderloin is another lean cut to look for. “It contains 3.5 grams fat, ;and 1 g is saturated fat, in a 3 oz serving that’s similar to a 3 oz chicken breast,” says Brennan. A pork chop has five times as much saturated fat. When you go shopping, it’s good to know that a center cut of pork is also lean meat.

“Ham is red-meat pork, but if you trim the fat, it’s also a lean cut,” says Meadows. Keep in mind that ham, like other processed meats, is still higher in sodium.

“One ounce of lean pork has about 45 calories, which is the same as 1 oz of chicken. Cutting off the fat helps. A 3 oz serving of roasted pork center loin has about 169 calories with the fat trimmed, but about 200 calories if you leave the fat on,” says Meadows.

How To Make Blackened Pork Chops

Here’s a tasty way to fry chops. But caution is in order; one false move, and it’s like tossing a burning tire into your kitchen.

To begin, season your pork chops with salt and pepper and Cajun spices. Then, in a hot skillet over high heat with a little vegetable oil, sear the chops. Chef John has a great method for “sorta blackened” chops. He starts with high heat, but as soon as he adds the chops to the super-hot skillet, he turns the heat down to medium…and sears them until almost done about 5 or 6 minutes per side. That’s trick #1.

The key is to get a serious sear without burning away all the flavor. Trick #2 is that after 5 or 6 minutes per side, he takes the chops from the skillet and wraps them up in aluminum foil. They’ll complete cooking in the foil and produce a lovely natural sauce. Be sure to check the doneness with a meat thermometer 145 degrees F.

Kitchen Cues For Healthier Pork Options

“Lean, white-meat pork is as healthy as chicken but not as healthy as fish,” Meadows points out.;Current dietary recommendations are to eat fish as your protein source at least twice a week.

Try these heart-smart cooking rules when you choose pork:

  • Choose lean cuts not marbled with fat.
  • Cut any fat off the meat before cooking or eating.
  • Skim any saturated fat before reheating leftovers.
  • At a restaurant or at home, choose roasted, broiled, or grilled, not fried.
  • Avoid breading and frying breading adds calories and soaks up fat.
  • Avoid barbecue sauce and pork gravy.

Trying to spice it up? Reach for herbs and vegetable ingredients when you’re doing the cooking. “To flavor pork, try calorie-free herbs and spices,” says Meadows. “Salsa is also a healthy flavoring choice.”

Pork can be the “other white meat” if you follow these guidelines, you can still meet your main goal to avoid saturated fat when you have high cholesterol.

The 2015 Dietary Guidelines for Americans recommend consuming less than 10 percent of your daily calories from saturated fat. That means skipping high-fat pork options, like sausage, bacon, and spareribs and thinking lean.

Why Do You Soak Pork Chops In Milk

Milk-marinated pork chops are super easy and tender. Use regular milk, buttermilk, or yogurt and marinate them for at least two hours but preferably overnight. ;

What Makes Some Think Pork Is Bad

1)Some are referring to processed pork , such as sausages, bacon or salami, while talking about it.

Many processed forms may really be dangerous for health but we are not discussing them now and are talking about lean pork such as tenderloin, sirloin chops or top loin chops.

2) Does pork contain more viruses toxins or parasites?

As we all know they all die if you cook them with high enough temperature. For that USDA has defined its recommended temperatures for cooking various types of meat.

More importantly the recommended temperature is the same for both foods. Its 145 °F for both, and 160°F for ground meat. So whatever viruses these types of red meat have, they all die at the same temperature according to scientists.

3) Pig is a dirty animal and eats whatever it wants.

This partially depends on how the cow, the pig or the chicken are handled on what they are being fed. Grass fed beef really differs from not grass fed one which is a topic for a future article. We should always think of how the animal was fed regardless of the type of meat. And finally, after cooking with USDA recommended temperature we kill all the viruses and parasites as covered in the previous headline.
