Triglycerides are the fat form most commonly found in nature, and wild fish. This structure is comprised of three fatty acids + glycerol backbone. When a fish oil is refined or molecularly distilled there is an introduction of alcohol which is used to remove the glycerol backbone of natural triglyceride fatty acids. What you are left with is the ethyl ester form of fatty acids comprised of one fatty acid + an ethanol backbone. This process of molecular distillation or refining is typical when concentrating EPA and DHA omega-3 fatty acids specifically. Are Fish Oil Supplements Safe

Omega-3 fatty acids are generally regarded as safe, however some adverse side effects have been observed in trials using prescription Omega-3s.
